Ingredients:
– 1 lb salmon fillets
– 1 tsp chili powder
– 1 tsp cumin
– 1 tsp garlic powder
– Salt and pepper to taste
– 8 small flour tortillas
– 1 grapefruit, peeled and segmented
– 1/2 red onion, diced
– 1 jalapeno, seeded and diced
– 1/4 cup fresh cilantro, chopped
– Juice of 1 lime
– Salt and pepper to taste
– Optional toppings: avocado, sour cream, shredded lettuce

Instructions:
1. Preheat the oven to 375°F (190°C). Season the salmon fillets with chili powder, cumin, garlic powder, salt, and pepper. Place them on a baking sheet and bake for about 12-15 minutes, or until cooked through. Remove from the oven and let cool slightly.
2. While the salmon is cooking, prepare the grapefruit salsa. In a bowl, combine the grapefruit segments, diced red onion, diced jalapeno, chopped cilantro, lime juice, salt, and pepper. Mix well and set aside.
3. Once the salmon has cooled, flake it into bite-sized pieces using a fork.
4. Heat the flour tortillas in a dry skillet over medium heat, flipping once, until warm and pliable.
5. Assemble the tacos by placing a spoonful of the flaked salmon onto each tortilla. Top with grapefruit salsa and any additional toppings you desire, such as avocado, sour cream, or shredded lettuce.
6. Serve immediately and enjoy!
