Ingredients:
– 1 tablespoon vegetable oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tablespoon curry powder
– 1 tablespoon red curry paste
– 1 can coconut milk
– 2 cups vegetable or fish broth
– 1 tablespoon fish sauce
– 1 tablespoon brown sugar
– 1 can diced tomatoes
– 1 cup cubed salmon fillets
– 1 cup chopped vegetables (such as bell peppers, carrots, and green beans)
– Fresh cilantro, for garnish
– Lime wedges, for serving

Instructions:
1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until the onions are translucent, about 5 minutes.
2. Add the curry powder and red curry paste to the pot, and stir to coat the onion and garlic mixture.
3. Pour in the coconut milk and vegetable or fish broth, and stir well to combine. Bring the mixture to a simmer.
4. Stir in the fish sauce and brown sugar, and then add the diced tomatoes.
5. Add the cubed salmon fillets and chopped vegetables to the pot. Simmer for 10-15 minutes, or until the salmon is cooked through and the vegetables are tender.
6. Serve the curried coconut salmon soup hot, garnished with fresh cilantro and lime wedges. Enjoy!
